Our Wines
Keeling-Schaefer wines comes from the finest grapevines available in the world today. Herrick Grapevines, of St. Helena, California, supplied us with 7200 ENTAV dormant benchgrafts for our April 2004 planting. These plants are Syrah clones; 174, 383 and 877; and Grenache Noir clones, 513 and 362. All of the clones were grafted onto 1103P rootstock, which has been selected for its drought resistance and proven performance here in Arizona.

2007 Three Sisters Syrah
A long, dry growing season for 2007 provided great conditions for a large and late harvest in October. We allowed the fruit to ripen this year to 25 brix. Very ripe, dense and lush in the mouth, our “Three Sisters”, planted at our home ranch high in the foothills of Arizona’s Chiricahua Mountains, reflects a fruit-forward style and a floral nose. 938 cases produced.

Alcohol: 15.6%
Ph: 3.91
Treatment: Must cold soaked for 72 hours. Fermented with a variety of yeasts, including native, in 1.5 ton fermentation bins. Free run juice was transferred directly to barrel. Full malolactic fermentation and 18 months maturation in mixed oak, 15% new American. Un-fined, no enzymes or stabilizers. Lightly filtered with coarse paper media for clarity.

2007 Two Reds Grenache
The 2007 “Two Reds” Grenache is a translucent, ruby-tinged crimson wine that is crisp and savory. It expresses fruit-forward flavors of plum, black cherry and prickly pear fruit, with spicy black pepper notes. Powerful nose and flavors with surprising balance and finesse. Very long finish. 633 cases produced.

A long, dry growing season in the Chiricahua foothills allowed an abundant October harvest of near perfect fruit. Our 2007 Grenache is a light bodied red wine that makes a flavorful and welcome alternative to Pinot Noir. Very food friendly and great with spicy dishes.
Alcohol: 15.5%-Ph: 3.74
Treatment: Must cold soaked for 72 hours. Fermented with ICV-GRE and native yeasts in 1.5 ton fermentation bins. Free run juice transferred directly to barrel. Full malolactic fermentation and 12 months maturation in mixed oak, 10% new French. 4% Syrah added for color and structure. Un-fined, no enzymes or stabilizers. Lightly filtered with coarse paper media for clarity.

2008 "Best Friends" Chardonnay
This fruit came from the oldest Chardonnay vines in Arizona, planted on the Dos Cabezas bench near Willcox in 1984. Over the years these vines have produced the finest Chardonnays in Arizona under the Dos Cabezas label. Toasty with pear and citrus notes.

2008 Rock Creek Rosé
Made in the Provencal style, this dry Rose’ is 63% Mouvedre, 33% Grenache and 4% Syrah. Bled from the crush, gravity clarified and steel fermented with a yeast strain isolated from the Bandol region of southern France. Clean crisp and full of pomagranate fruit.

2007 "Best Friends" Chardonnay SOLD OUT!

Lightly oaked in new French, this is our limited edition "practce wine", getting us ready for the Viognier we planted last year in our vineyard. Don't be fooled though, it tastes like we have had a lot of practice making white wine! |

A sunny September followed an active summer monsoon season for 2006 and allowed the Syrah over a month of additional “hang time”. Very ripe, dense and round in the mouth, our “Three Sisters”, planted high in the foothills of Arizona’s Chiricahua Mountains, reflects a fruit-forward style dominated by black cherries.
